Whole Foods For Wellness Cooking & Nutrition Classes (begins Sept 24, 2012)

Join whole foods personal chef and caterer, Chef Laura Moore, and Naturopathic Physician, M.J. Atkins, for a six week course of whole foods cooking classes hosted at North Saanich Middle School this fall.

Students will gain the benefit of a Naturopaths insights into the bountiful nutrition provided in the whole foods recipes presented in class, along with learning techniques for working with whole foods and super foods ingredients, with pointers from Chef Laura. Classes run Monday, September 24th until Monday, October 29th, from 6:30 – 8:30 PM, and will run again in Spring 2013.

These Fall 2012 evening classes will be hosted at North Saanich Middle School, located at 10475 McDonald Park Road, in North Saanich. Classes run from 6:30 – 8:30 PM, on Mondays, Sept 24, Oct 1, 8, 15, 22, 29, 2012. Cost, $54, plus HST, per class. Set of all six classes is $300, plus HST.

Learn to make nutritious, delicious vegetarian whole foods ingredients into satisfying recipes that you will enjoy again and again at home with your family and friends. Focus is on how to use vegetarian protein sources in mostly vegan, low saturated fat, mostly dairy-free recipes. Students enjoy the finished recipes in class, and take home in-depth recipe handouts

Lesson 1: Mexican Quinoa Salad, Roasted Yam & Black Bean Quesadillas, Tofu Cheesecake with Raspberry Margarita sauce;

Lesson 2: Seasonal Root Veggie Slaw, Palak Paneer with Eastern Rice & Pappadums, Raw Cashew Fudge;

Lesson 3: Soba Noodle Salad with Garlic Chili Flax dressing, Almond-breaded Tofu cutlets, with Black Bean Broccoli & Onion Saute, and Coconut Pudding Pie;

Lesson 4: Walnut, Corn & Yam Salad with Golden Berry dressing, Moroccan Carrot & Hazelnut Pate with whole grain crackers, Super Foods Truffles;

Lesson 5: Hot & Sour Soup with Goji Berries, Mushroom Chop Suey with Seitan, and rice noodles, Eight Treasure Rice Pudding with Sweet Almond sauce;

Lesson 6: Seasonal Greens & Roasted Veggie Salad with Mood Maker dressing, Ginger Black Bean Veggie Burgers, Hazelnut butter Brown Rice Crispy Squares
